Winter Berry Cheesecake

This is a no‐bake and easy‐to‐make Winter Berry Cheesecake and is the perfect accompaniment to a hearty evening meal. With its juicy berry topping, this dessert will leave your taste buds tingling and your tummy satisfied.

Ingredients

Biscuit Crumb Base

  • 180g digestive biscuits (into crumbs).
  • 70g melted butter.

Cheesecake Filling

  • 250g cream cheese.
  • 90g icing sugar.
  • ¾ teaspoon vanilla essence.
  • 240ml whipping cream.
  • 1 tablespoon vegetarian gelatine.
  • 2 tablespoons milk.

Blueberry/Raspberry Topping

  • ½ cup blueberries.
  • ½ cup raspberries.
  • ¼ cup + 2 tablespoons sugar.
  • ½ tablespoon cornstarch.
  • Pinch of cinnamon (if needed).
  • 2 tablespoons water.
  • ½ tablespoon lemon juice.

Method

Biscuit Crumb Base

1. Mix the biscuit crumbs and melted butter, press them down on the bottom of a 7‐8 inch springform cake pan (or line a regular cake pan with cling‐film). Place in the refrigerator to cool while making the cheesecake filling.

Cheesecake Filling

  1. In a medium bowl, beat together the cream cheese, sugar and vanilla, side aside.
  2. Beat the whipping cream until thick peaks appear, set aside.
  3. In a small pot add the milk and sprinkle the gelatine on top, let stand one minute, then place the pot on low heat and heat just until the gelatine has dissolved, stirring often (1‐2 minutes), do not boil, then immediately remove from heat.
  4. Add 1 ‐2 tablespoons of the cream cheese mixture to the gelatine mixture and stir gently to combine. Next, fold the gelatine into the remaining cream cheese mixture. Finally, gently fold it into the whipped cream, mix until combined.
  5. Remove the biscuit crumb base from the fridge, spoon the cheesecake filling evenly on top, cover with cling‐film place in the refrigerator for 4‐5 hours or even better overnight.

Berry Topping

  1. In a medium pot mix together the berries, sugar, cornstarch, cinnamon, water and lemon juice, bring to a boil then simmer until desired thickness is reached. Pour into a bowl, let it cool, then refrigerate for at least a few hours. The filling will thicken as it cools.
  2. Top the cheesecake with the berry topping or onto individual slices as you serve.
